Azores-Style Beef Stew

This simple dish is Portuguese comfort food, with hearty flavors from chorizo, chuck roast, potatoes and onions.

Ingredients:
- 3-5 lb Star Ranch Angus® chuck roast cut in 1-inch cubes
- Salt/pepper, to taste
- 1 tablespoon paprika
- 1 teaspoon allspice
- 2 packs of Chorizo diced in .5-inch pieces
- 1 gallon beef stock
- 6 garlic cloves
- 2 onions, diced
- 1 bag baby potatoes
Instructions:
- Place the cubed beef in a bowl. Sprinkle with the paprika, allspice, salt and pepper. Mix the beef and spices until the beef chunks are covered on all sides. In the slow cooker, place the beef, diced onions, potatoes, beef stock, chorizo and garlic cloves. Set on slow for 8 hours.
- Serve in a deep dish and finish with fresh ground pepper.
