Grilled Skirt Steak With Pineapple Cilantro Salsa

Ingredients:
- 4-5 portions Star Ranch Angus® skirt steak (cut at about 7-8 oz)
- ½ cup sesame oil
- Salt/pepper, to taste
- ½ cup chopped garlic
- ½ cup apple cider vinegar
- 1 cup extra-virgin olive oil, divided
- 1 small pineapple diced small
- 1 bunch washed fresh cilantro
- 1 red pepper diced small
Instructions:
- In a plastic sealable bag, place the sesame oil, garlic, ½ cup of olive oil and apple cider vinegar. Season the beef with salt and pepper. Place the beef in the bag and marinate overnight. In a bowl, mix the pineapple, diced red pepper, cilantro, the remaining olive oil and salt/pepper. Mix well and set aside. On a hot grill, cook the skirt steaks for 1 to 2 minutes on each side (for medium-rare). Cut in half lengthwise and slice thin against the grain. Top with the pineapple salsa
